I used garlic powder, cumin, cilantro, red pepper green enchilada sauce (I get the kind in a can) cooking spray How Do I Make Ariel's Chicken Enchiladas?Here is how you make Ariel's Chicken Enchiladas: preheat oven to 350. spread a few tablespoons of green sauce in the bottom of a greased 9x13 pan, sprayed generously with cooking spray.Boil chicken until done (or cook however you like) and shred it.Chop onion, drain rotel, and combine all 3 into a large bowl. Add 4 oz. cream cheese, shredded cheese, and any spices you like, to taste.mix to combine very well.Heat 8 medium tortillas in microwave for about 30 seconds to get them pliable. Fill each with about 1/2 C of filling. Spread it out so it reaches the end of the tortilla in a line. Roll tightly, and place seam side down in GREASED 9x13 pan. Fill all 8.Sprinkle all enchiladas with the remaining green sauce, making sure to cover all areas of the tortilla (this will prevent them from getting hard when baking).Top with remaining cheese.
