2 Chicken Breasts, cooked and diced
8 corn tortillas
1 10 oz can Green Enchilada Sauce
1 4 oz. can diced green chilies
1 cup fat free cottage cheese
salt and pepper, to taste
1 1/2 cups shredded Jack Cheese


How Do I Make Chicken and Jack Enchiladas Verde?

Here is how you make Chicken and Jack Enchiladas Verde:

Preheat oven to 350.Mix the Cottage cheese and green chilies and salt and pepper in a small bowl. In meduim bowl, pour the can of encilada sauce.Wrap 4 tortillas at a time in a paper towel and microwave for 45 seconds. Dip tortilla into the enchilada sauce. Using a 8x11 pan, place the tortilla in the pan. Put 2-3 Tbsp. cottage cheese and chilie mixture in the middle of the tortilla. Next put about 1/4 cup of cooked diced chicken breast and a sprinkle of jack cheese. Roll the tortilla, and place seam side down on one side of the pan. Repeat with the rest of the tortillas. Whena ll 8 enchiladas are snug in the pan, mix whatever leftover cottage cheese and chilie mix and enchilada sauce you have left. Pour over the top of the rolled enchiladas. Top with remainder of jack cheese.Bake at 350 for 40 minutes or until the sauce gets bubble and the cheese starts to crisp.
