1 - Bay Leaf
2 Tbsp. - Cilantro, raw
1 sm. Onion, quartered
2 tbsps - Tomato Paste .
1.5 tsp - Chili powder
1.5 tsp - ground Cumin
2 dashes Salt
2 cups - Cheddar Cheese, shredded
1 sm. can Ortega Green Chiles,chopped
1 sm. can Black Olives, chopped
1 med. can La Victoria Enchilada Sauce
1 tsp. Cinnamon, ground
8 Corn Tortillas, medium (approx 6" dia)
4 Tbsp. Sour Cream
sprigs of cilantro for garnish

Here is how you make Chicken Enchiladas d'karyn:

Preheat the oven to 275 degrees F.Wrap corn tortillas in foil and warm in the oven. Bring broth to a boil in a saute pan. Set chicken into broth with bay leaf and cilantro and onion. Return to a boil, cover and reduce heat to simmer. Poach chicken in broth 10 minutes. Remove chicken breasts to a bowl and shred with 2 forks. Add 1/2 cup of cooking liquid and tomato paste, green chiles, 1/2 the can of black olives, spices and salt and work through the chicken using the forks.Warm sauce and add cinnamon, keeping warm until needed.Remove tortillas from oven and turn oven up to 400 degrees.Pile chicken mixture into warm corn tortillas and roll. Line casserole or baking dish with enchiladas, seam side down. Pour hot sauce over the chicken enchiladas and top with cheese. Place in enchiladas in hot oven and bake until warmed through and bubbly, approx. 15 mins. If you want to brown the top you can put it under the broiler for 5 mins.
