1 jar Trader Joe's Salsa Verde (22 TBL)
1 4 oz can chopped Green Chilis
2 cups shredded cheddar or pepper jack/cheddar combo cheese (may use LF cheese or a combo of both)
1 sm or half lg chopped onion - more if you like onions
1/2 cup shredded cheddar or pepper jack cheese - for on top
10 LaTortilla Multi-Grain Tortillas - Large

OPTIONAL:
Use LF shredded cheese or a mix of LF and regular cheese. *I would definitely use regular cheese on top.

Add black olives or jalapenos for additional flavor. (Not included in calorie count.)

Here is how you make Chicken Enchilada with Salsa Verde - Low Fat:

Boil chicken for about 20 until "almost" cooked.While chicken is boiling, chop onions and place all remaining ingredients - EXCEPT THE CHEESE - into a large bowl and mix thoroughly. Add 2 cups of the cheese and stir it in.When chicken is done cooking, drain water and let it cool for a few minutes - or run cold water over it to speed the process. Pull chicken apart into small pieces (like shredded chicken) and stir it into the mixture.Scoop about 1/10th of it into a tortilla and wrap it up like a burrito. Place it into a baking pan. Repeat until you have 10 enchiladas.
