1 jar La Costena Salsa Verde
1 8 oz. Kraft Pepper Jack cheese

Here is how you make Amelia's Homemade Chicken Enchiladas Verde:

Boil chicken then shred, reserving stock. Add shredded chicken back to pot and add enchilada sauce, Rotel, and seasonings. Heat to simmer, stirring occasionally. Set asside.Cook tortillas in small skillet with a small spoon full of oil in pan. Keep tortilla moving to speed process and heat evenly. Placed cooked tortillas in baking dish (this will serve to "grease" the pan).Place approximately 2 tbsp of chicken mixture in tortilla and roll. After enchiladas are completed, cover with salsa verde and shredded pepper jack cheese.Bake at 350 until cheese is barely starting to brown. (you will smell it.
