What Are The Ingredients For Rena's Homemade Chicken Enchilada's Recipe?The ingredients for Rena's Homemade Chicken Enchilada's are: 2 Chicken Breast,(No skin or bone)1 28oz can Enchilada Sauce 1 sm. can Green Chiles 1 Large can Sliced Black Olives 8oz Shredded Cheese 1 12oz Can of Larger 30 Tortias Dash of salt Fresh ground pepper to taste 1 tbs. olive Oil How Do I Make Rena's Homemade Chicken Enchilada's?Here is how you make Rena's Homemade Chicken Enchilada's: Sprinkle salt and pepper on both sides of chicken breast. Heat pan with 1 tbs. of olive oil. Sear breast on both sides until they are golden brown. Turn stove to medium heat and pour 1 12 oz can f lager in to pan. Cook until either liquid is gone or chicken is done. Remove from heat. Let chicken cool. When chicken is cool shred and place in large bowl. Add to bowl one small can of green chiles, 1/2 can of black olives (dice black olives), and about half bag of cheese. Mix with hands until mixed well. Heat tortias on burner until they are warm. IT makes them easier to roll. Place about2 oz of mixer in tortia on one side and then roll. Repeat until all the mixing is gone or you run out of tortias. PLace all rolled tortias in baking pan. Large pan works best. Pour 1/2 can of enchilada sauce on tortias Then sprinkle cheese and remainder of the black olives. Bake until moist of the sauce is soaked up and tortias are a little crisp.
