3 boneless/skinless chicken breast, cut in chunks
2 cups instant brown rice, uncooked
1 15 oz can black beans, drained and rinsed
1 15.25 oz can sweet yellow corn, no salt added
1 14.5 oz can diced tomatoes no salt added
1/2 cup each chopped: red onion, green bell pepper, red bell pepper
2-3 tablespoons fresh cilantro, chopped
chili powder to taste

Here is how you make Southwest style Chicken and Rice:

Bring the water to a boil for the rice in a large pot. You can also use low-sodium chicken broth instead of water. While waiting for water to boil, sprinkle chicken with salt and pepper and cook in a non-stick skillet over medium high heat along with the onion. When the chicken is starting to brown slightly, add the red and green bell peppers. Cook until the chicken is browned all over. Remove from heat and cover. Once the water has began to boil add all ingedients, including the chicken mixture, and cook until rice is tender, about five minutes. Garnish with fresh tomatoes and additional cilantro if desired.
