Add chicken pieces, chipotle powder and fry until chicken is golden. Stir in corn kernels, pasta sauce, soup mixture and water. Gently simmer 5 - 10 minutes. Add additional water to dilute if necessary and salt to taste. Spread each tortilla with cottage cheese and slice into three strips. Place two strips on bottom of oven-proof dish and spoon a third of chicken sauce mixture over. Sprinkle with 10 grams shredded cheddar. Place two more strips of tortilla and repeat process with second and third sets of tortilla strips layered between chicken mixture but retain 10 grams of shredded cheddar. Cover dish with foil and bake for 15 munutes.
