Fresh spicy tomato sauce over braised chicken. Served over garlic noodles with sauteed vegetables. This is a great fresh, filling dinner. We served it over pasta, but would also be delicious over brown rice, in lettuce wraps, or light tortilla!!!**Can omit 100 calories and 11 grams of fat by using nonstick spray instead of oil; fat free butter spread; and no cheese. Crushed Red Pepper Flakes - 1 tsp. 2 large Baby Zucchini - about 3 cups Bell Pepper (I used home roasted red) - 1/2 cup Broccoli Slaw Mix - 6 oz. **Promise Butter Spread - 1 Tbsp. Lawry's Garlic Salt with Parsley - 1 Tbsp. **Shredded Colby and Monterey Jack Cheese - 1/4 Cup How Do I Make Spicy Garden Fresh Chicken Ragout?Here is how you make Spicy Garden Fresh Chicken Ragout: Bring a large pot of water to a boil. Heat a large saute pan over medium high heat. Add 1 3/4 Tbsp Olive Oil. Caramelize onion. Remove onions from pan using slotted spoon.Score both ends of tomatoes and drop in boiling water for 15 seconds. Remove from water and run under cold water until cool enough to handle. Peel off skins, cut in half, remove seeds, and either dice very small (mince) or blend until desired texture with onions (either minced, or blend with tomatoes). Reserve.Add salt to boiling water. In the same large pot , cook pasta. When al'dente, drain. Toss with butter and garlic salt. Hold until ready to eat.In same pan used to cook the onions, add chicken pieces. Season with salt and peper, and sear well (nice golden color). Once browned, add garlic, cumin, and crushed red pepper flakes. Cook until garlic is golden. Add reserved tomato/onion mixture. Lower heat to low and slowly cook until chicken is cooked through. Reserve for service.Meanwhile, in a separate large saute pan, heat 1/2 Tbsp. olive oil over high heat. Add diced zucchini and toss, brown well on each side. Season with salt and pepper. Once browned, add broccoli slaw mix. Toss together. Once lightly cooked, add small splash of water (2 tbsp) and roasted red pepper. Toss to heat through. Reserve.Serve pasta topped with vegetables and chicken.
