2 chicken thighs, boned, skinned, de-fatted
1 cup chopped onion
1 cup finely grated sharp cheddar
1 cup frozen spinach
2 cloves of garlic, minced
1 tbsp ground cumin
1 tbsp chili powder
1 tbsp olive oil


How Do I Make Chicken and Spinach Quesadillas?

Here is how you make Chicken and Spinach Quesadillas:

Sautee onions with fresh cilantro in a skillet with a little bit of olive oil. While doing this, cut the chicken thighs into small chunks, making sure to discard any fat left in the meat. Once the onions have gone translucent, add in the chicken and start to cook. When the chicken is about halfway cooked, add in the garlic, cumin, and chili powder and turn heat to medium-low. Let chicken finish cooking, being sure to stir regularly.When done, transfer chicken to bowl and wipe skillet with a paper towel. Use cooking spray or a small amount of olive oil to lubricate the pan. Place one tortilla in the pan. Cover the tortilla with 1/3 of the shredded cheese. Once cheese has mostly melted, put 1/3 of the spinach and 1/3 of the chicken mixture onto one half of the tortilla. Fold the other half over the mixture and turn the quesadilla. After about a minute, transfer quesadilla to plate.Repeat these steps for the other two tortillas. The quesadillas can be garnished with salsa and light sour cream.
