Here is how you make Tex Mex Chicken Stir Fry or Fajitas:

1) cut the chicken in bite size (for fajitas, make strips), and sprinkle with 2 tsp of the spices, let rest while you cut the veggies thinly, in strips. I use a pump spray bottle to spray my own oil. you can use pam. 2) so, spray your pan and stir fry the chicken, on medium-high. dump in a bowl. 3) spray pan, stir fry the veggies, and sprinkle the remaining spices, including the salt. this will allow the veggies to "weep" and the moisture will deglaze your pan. add a teaspoon of water of two if needed, you want to avoid burning any of the veggies. 4) fry veggies until soft to your taste, and add back the meat. if using the cayenne, srprinkle in to taste.serve on rice, on a salad or make fajitas.
