May easily be expanded by cooking one chicken breast per person, and allowing one soft corn tortilla for each.Chop Onion and dice tomato, sprinkle with a little garlic powder and Chili powder. Set aside.Cut chicken breast into strips or pieces using kitchen shears. Squeeze out the juice of one lime into a frying pan. Heat to Medium, add chicken. Cook for approximately 10 minutes, or until chicken is done through. Add water to lime juice if the pan is starting to dry. I do not recommend microwaving because the corn can become soggy, then over-dry. If cooking for a party, you can heat a stack of them in the oven at once, taking them out when the dish is ready to serve.Once chicken is done and the tortillas are heated, assemble taco. Snip fresh cilantro over the top. Always put cilantro on the taco last so it doesn't wilt.
