1-2 tbsp minced garlic
2c chopped carrots (1/2-2/3 lb)
3 chopped sweet peppers (green, red, yellow, etc)
1 can each black, white, and kidney beans, drained & rinsed
1 can large can diced tomatoes, or whole peeled tomatoes, or 1 12-oz can of tomato puree/crushed tomatoes, and several fresh tomatoes chopped
1-2 cups frozen sweet corn
1 packet chili seasoning, or a mix of chili powder, cumin, chipotle, cinnamon, cayenne, etc, to taste.
1/4-1/3 cup nutritional yeast

This is usually a "throw stuff together" chili, so I'm trying to write down what I did last night!Sautee your onions and garlic in the olive oil in a LARGE pot over medium heat. You're just gonna keep adding stuff to this one pot, so only one dish to wash! Optionally, you can add ground beef/turkey/veggie-meats at this stage to fry them.Add the carrots and peppers, sautee until they start to soften.Now, pour in your beans (they are rinsed, right?) and the chili seasonings. Just a basic mix will do for now, you'll refine the seasonings later.Sautee a little longer, then add your tomatoes. Whatever feels right to you--if you like chunky chili, use diced tomatoes (undrained). If you don't like tomato chunks, use crushed/pureed. Add the corn and bring to a simmer.Cover and lower heat to very low. Stir occasionally but cook for several hours, preferably at least 3, until carrots and peppers are very soft.About 15 minutes before serving, test seasonings. Add your nutritional yeast, and stir well. Good luck, and any questions are welcome! Generally this makes 6-8 servings, although it is EASY to make a lot more! Pairs well with tortilla chips or cornbread.
