In large saucepan, melt fat. Once fat is hot, but not smoking, add onions and garlic. Saute a few minutes, until onion is tender. Do not brown the garlic. Add spices and heat through. Add beans, tomatoes, and tomato paste. Cover and simmer 2 hours, or bake at 350 degrees for the same, or cook in a slow cooker on low for 6-8 hours.Serve topped with grated cheese and chopped onions, if you like.
