But I often do it vegan and instead of canned chipotles I just use a whole 14 - 16 oz can of enchilada sauce instead. How Do I Make Quick Homemade Chili?

Here is how you make Quick Homemade Chili:

Dice onions and garlic and add to olive oil to start cooking. I add the bacon or whatever meat I might choose to use at this point. Cook for 3 minutes until onions are tender. Add carrot and celery and continue cooking, stirring occasionally on med/low heat. Add spicy chili and sweet peppers chopped. Add veggie ground round and stock. Break up with a wooden spoon and stir until ground round is completely broken up. Use half can of chipotles by pouring off some of the sauce into the pot and extracting the rest by hand. Chop fine and add to the mixture. Add canned tomatos and beans and finish with water. Increase heat to medium and let cook, stirring occasionally until it reaches a boil. Cook off moisture or add more depending on how thick you like your chile. This recipe makes it right in the middle like a thick stew. However any leftovers might be improved by the addition of more stock or water when reheating.
