The ingredients for Chipotle Pork Chili are:

1 lb pork tenderloin
1 can chipotle peppers
1 bell pepper (I prefer orange, but yellow or red will do)
1 clove garlic
1 large onion
1 cup light beer
0.5 cups of your favorite salsa
0.5 cups of frozen corn kernels
1 cup small red beans (I had to substitute kidney for the calorie calculations, but these are better in the recipe).
4 T chili powder
2 T cumin



How Do I Make Chipotle Pork Chili?

Here is how you make Chipotle Pork Chili:

Slice pork tenderloin and then cut each slice in half. Toss pork pieces with chili powder and cumin. Shake off excess spice.Crush garlic clove and saute in 1 T of oil. You can do this with cooking spray too for fewer calories. Just use lower heat. Add meat to pan and brown.Chop onion and pepper in a large dice. Add to the pan. Then add beer and salsa. Add 1 tsp of chipotle peppers to the pan. I do this by using my small food chopper/processor to grind up a single pepper from the can, BUT I think you could just take the sauce that the pepper is packed in to achieve pretty much the same effect.Bring to a boil and then reduce heat to a simmer. Simmer for 30 minutes. You can actually do this step less if you are rushed or more if you want something even more tender and spectacular. At the end of 30 minutes, add cup of beans and frozen corn. Heat 5 more minutes.Serve over brown rice. Garnish with cilantro or avocado if so desired.
