Preheat oven to 400 degrees.2. On a cookie sheet lined with parchment paper place quarted onions, halved tomatillos (cut side down), jalape?o peppers (cut side down), and garlic cloves. Sprinkle with the half of the olive oil. Roast in the oven for 20-30 minutes.3. While the vegetables are roasting, in a dutch oven heat remaining olive oil to medium high heat. Dump in pork and brown until golden. 4. Take the vegetables roasting in the oven out and add to port. Pour chicken stock over until the pork and vegetables are covered. Stir. 5. Cover the dutch oven with the pork and vegetables and place in the oven. Cook for 1 1/2 hours. 6. While the pork is in the oven, puree cilantro with one tablespoon of water.7. After the pork chili is done the oven. Stir in cilantro puree. Heat through and serve with quartered tortillas.
