1 cup yellow onions, chopped
1/2 cup green peppers, chopped
1 tsp garlic, chopped
1/3 cup sundried tomatoes, chopped
3 cups fire roasted canned tomatoes
1 3/4 cups black beans
2 tsp chili powder
1 Tbl fresh oregano, chopped or 1 tsp dried
1 tsp ground cumin
1 Tbl salt
3 cups chicken broth, low fat, low sodium or 3 cups vegetable broth
1/3 Masa Harina
3 3/4 Tbl fresh cilantra, chopped
1/4 cup scallions or chives


How Do I Make Roasted Tamale Chili?

Here is how you make Roasted Tamale Chili:

Heat olive oil in skillet. Add onions and green peppers. After 6 min add the garlic being careful not to brown. Stir in both kinds of tomatoes, beans, chili powder, oregano, cumin, chili peppers (if desired), salt and 1 cup of the broth. Bring to simmer and cook, uncovered over low heat, stirring occasionally for about 5 minutes. Meanwhile, in a 1 quart saucepan, bring the remaining 2 cups of broth to a boil. Reduce the heat to low and whisk in the masa harina. Cook gently for about 4 minutes, or until the mixture has thickened slightly. Remove from heat and carefully pour the masa broth into the bean mixture. Add the cilantro and stir well.
