I got this recipe from my brother-in-law and it was labeled Venison Chili. However, we all make it with lean hamburger so it became Paul's Chili. YOu can make it spicier if you prefer by upping the hot sauce and chili powder. I sometimes substitute Portobello mushrooms, black beans, or Bush Hot Chili Beans.

What Are The Ingredients For Paul's Chili Recipe?

The ingredients for Paul's Chili are:

1.5 lbs 90% lean ground beef
3 cloves of garlic
2 large onions, chopped (I substitute dried, minced onions)
1 tbs Chili Powder
1 tbs dry Italian Seasoning (not the Salad Dressing mix but the Italian Seasoning available in the Spice Aisle)
1 tsp Celery Salt (I sometime substitute Celery Seeds to cut down on the salt)
1 tsp Black Pepper
2 28 oz cans Diced Tomatoes, No Salt Added (If you can find them, otherwise just regular Diced Tomatoes)
2 15.5 oz cans Dark Red Kidney Beans, No Salt Added, rinsed
2 8 oz baskets fresh mushrooms, chopped
1 package McCormick Taco Mix, 30% lower salt
1 tbs Red Paprika
10 dabs of Frank's Hot Sauce



How Do I Make Paul's Chili?

Here is how you make Paul's Chili:

1. Cover bottom of Dutch oven or large cooking pot with olive oil and place on medium heat.2. Dice up onions and garlic then place in Dutch oven.3. Add mushrooms to onions and garlic and cover with lid.4. In another fry pan add some olive oil and add meat. 5. Add the following seasonings, chili powder, red paprika, Italian seasoning, celery salt, and black pepper to ingredients in Dutch oven.6. Add taco mix to cooking meat and stir.7. When meat is thoroughly cooked add to Dutch oven. Stir the pot and let cook for a minute or two.8. Now add tomatoes, kidney beans and fresh mushrooms to the above ingredients.9. Add Frank?s hot sauce to the above mixture.10. Cover the pot and let simmer to desired thickness. Serving Size:?Makes 8 1 cup servings (approximately)
