This is a family favorite and I am continuing to work on making it more healthy. If you have any ideas to help in this area I would love to hear them. What Are The Ingredients For Brandi's Enchiladas Recipe?The ingredients for Brandi's Enchiladas are: 3 lbs 93% Lean Ground Beef2lbs of Brandi's Award Winning Turkey Chili (you can do a search for the recipe on SparkRecipes) 3 Vidalia onions finely chopped 30- Mission Carb Balance Whole Wheat Flour Tortillas (80 calories each) 3 cups Kraft 2% Shredded Cheddar Cheese How Do I Make Brandi's Enchiladas?Here is how you make Brandi's Enchiladas: cook chopped onions until translucent. Add beef and cook until brown. Add chili and cook until heated. in 2- 9X13 dishes lay out all your tortillas folded in half. Place a scoop of meat mixture (approx 1/3 cup) inside each tortilla. You will not use all of the meat mixture at this point. Add a pinch of cheese on top of meat (use approx 1 1/2 cups). Roll up each tortilla with the end facing down. Use the rest of the meat to sprinkle over the top of the enchiladas. SPrinkle remaining cheese over meat mixture. Bake on 350 degrees for 20 minutes. Makes 30 enchiladas.
