Here is how you make New Orleans/Mexican Tilapia:

Preheat the oven to 350.Cover both filets in 1 tbs of olive oil, the other table spoon will be used later, sprinkle seasoning generously on each side. In a large shallow pan, add the tilapia. Cook for 10 minutes or untill almost done.Pull it out of the oven and lower the temperature to 250 (adjust the heat as not to overcook the fish; if it seems too hot, lower the temperature). Add the sliced tomatoes and the olive oil on and around the fish. Add a dash of salt.
