For the Taco Meat:
1/2 lb. Laura's Lean Beef
1/4 cup lentils
1 tbs extra virgin olive oil
1 tbs cumin
2 tsp garlic powder (NOT garlic salt)
1 tsp chili powder
1 tsp chipotle powder (more or less to taste)
1 medium onion, chopped
1 large bell pepper, chopped
1 1/4 cups water

*4 servings tortilla chips, crushed into bite-sized pieces (note, nutrition info for this was figured using Snyder's of Hanover's Yellow Corn tortilla chips)
3 cups romaine lettuce
3 cups fresh baby spinach leaves
*2 cups salsa
4 tbs nonfat yogurt
4 oz. shredded reduced fat cheddar cheese

*Note: The type of salsa and chips used will drastically affect the sodium amount (and possibly the fat content as well) in the recipe. If you're looking to lower the sodium- carefully watch which type you are using. A way to significantly reduce the sodium is to make your own fresh salsa instead of using store bought. To cut more fat out of the recipe, you can buy baked tortilla chips instead of standard.

How Do I Make Taco Crumble Salad?

Here is how you make Taco Crumble Salad:

Heat olive oil in a large non-stick skillet over medium-high heat. Add meat, peppers, & onions. Saute for 4 minutes or until the vegetables begin to soften. Add lentils and spices and 1/4 cup water. Lower heat to medium. Stir thoroughly and continue to cook until the mixture seems dry again. Add another 1/4 cup water. Repeat and continue until all of the water has been used and absorbed into the lentils and the meat is browned (should take about 15 minutes). Set meat aside. Divide tortilla chips among 4 plates. Divide meat, cheese, lettuce, and salsa between the plates. Top each salad with 1 tbs nonfat yogurt instead of sour cream. Makes 4 Dinner-sized salads.
