Nearly every restaurant serves chile and red or green is a reference to the type of chile you want with your meal. This chile dish is a healthy New Mexican version of a Texas favorite. What Are The Ingredients For New Mexico Turkey Chili Recipe?The ingredients for New Mexico Turkey Chili are: 8-10 dried red chile pods (whatever heat you prefer, I used extra hot), stems removed but leave in the seeds1lb ground turkey meat 1 can La Costena Pinto beans 1 med onion coarsely chopped 1-1.5 tsp olive oil 1 tbsp 2-3 garlic cloves or substitute garlic powder 4 cups of water Spices: ground cumin (to taste) Mexican oregano (crush it between your palms and pulverize to release the aroma and flavor) garlic or regular salt (to taste) How Do I Make New Mexico Turkey Chili?Here is how you make New Mexico Turkey Chili: Take 2 cups of water and bring to a simmer, add the dried chile pods and cover. Allow to simmer for about 15 minutes until nice and soft. In a large skillet, brown the turkey meat and season to taste with a little bit of cumin, salt/pepper and even dried chile powder if you desire, it's a matter of preference. Brown and set aside.In a blender, pour the chile pods with the water, seeds and all into the blender cup, add raw onion, garlic cloves, cumin, a bit of salt or garlic salt and the crushed oregano. cover and puree. Add remaining 2 cups of water and continue to blend for another minute or so. You will need a bowl and a strainer. Pour the liquefied chile through the strainer into a bowl. Use a spoon to press as much of the liquid through the strainer as you can. Discard the seeds and fiber. In the pot you used to simmer the chile pods add about a tsp or so of olive oil and heat over a medium flame, add a tbsp of flour to the hot oil and brown. Add liquid chile to the browned flour (be careful not to burn it!) and whisk briskly to ensure no flour clumps remain. Bring to a simmer, stir constantly. Allow chile to cook for about 10-15 minutes and then add ground turkey and beans. Simmer another 5-10 minutes and adjust seasonings as desired. Feel free to make adjustments/additions such as corn or cheese or sour cream, kidney beans instead of pinto etc just make sure you adjust the nutrition calculation based upon your changes. As is, one half cup serving is a lovely 15g of protein and only 22g of carbs and 5g of fiber which is perfect for someone like me who has diabetes and a reduced stomach size.
