Cook turkey in pan in pan, along with onion and spices. After browned, add tomatoes and simmer 5 minutes. Spray baking dish with cooking spray, or lightly coat with some of the canned enchilada sauce. Fill each tortilla with meat mixture and cheese (using about 1/2 the cheese when all 8 are rolled). Roll each tortilla tight and sit next to each other in pan. When all 8 are rolled, pour enchilada sauce over the top and top with remaining cheese. Cook for 20 minutes covered with foil.
