Saute onions in olive oil until translucent. Add shredded turkey and taco seasoning and stir to coat turkey with seasoning. Pour egg substitute or beaten eggs evenly over the turkey. Turn heat to low and cover. Cook for about 2 minutes. Check to see if egg is cooked through. Use spatula to cut fritata in half. Each half is one serving. Serve on warmed plate. Top with 1/2 of the salsa and cheese. I use the turkey meat I get from rendering the turkey carcass.
