* Red Ripe Tomatoes, 3 small, de-seeded and chopped
* Peppers, sweet, red, raw, chopped, 1 cup
* Hot chile pepers, .5 cup, chopped
* Onions, raw, .5 cup, chopped
* Zucchini, 1 cup, chopped
* Nutritional Yeast, 1/2 cup
* Unsweetened Soy Milk, 1.5 cup
* Margarine, hard, 1 tb
* *Flour, white, 1 tb
* fajita seasoning, 1 tsp
* ground cumin, 1 tsp
* cilantro, 1/4 cup chopped


How Do I Make Hatch Green Chile Vegan?

Here is how you make Hatch Green Chile Vegan:

This can be made really quickly if you are a good multi-tasker. with a four burner stove. :)1) heat the vegetable broth in a pot with a lid. when it looks like it is about to boil turn it down to medium LOW, stir in the rice and cover. (this will cook for 20 minutes then remove from heat)2) Heat a big non-stick pan with at least 2 inch sides to medium heat, as it heats chop your vegetables (not the Tomatoes!) and add them as you chop, stirring occassionally. These will cook for about 10 minutes then you will refer to step 5.3) chop tomatoes and cilantro and set aside. 4) in a skillet heated to medium high, toss together the tofu and fajita seasoning. Cook for about 10 minutes, stirring occasionally. After 10 minutes turn off heat. 5) once your veggies are a little soft, vigorously stir in the flour. Add the margarine and vigorously stir again. Stir in the nutritional yeast. Stir in the soy milk. Let this come to a boil stirring occasionally. 6) once the veggie mixture starts to thicken stir in the tomatoes.
