1. Chop all vegetables. Add to non-stick skillet along with juice from 1/2 lime, cajun seasoning, and cayenne pepper and sautee over medium heat.2. Spread cheese across tortilla. Microwave for 30 seconds, to make tortilla flexible and begin melting cheese.4. Add sauteed veggies, cilantro and scallions to tortilla. Fold tortilla in half.5. Cook quesadilla over medium heat, about a minute on each side or until tortilla is golden-brown and crispy at the edges. * I prefer this quesadilla as-is.
