Preheat oven 350 f. Mix flour, cocoa powder, bakingsoda, and salt in large bowl, set aside. Beat butter and sugar in largebowl with electric mixer on med. speed until light and fluffy. Add eggs vanilla; mix well. Fold in dry ingredients little by little. Try not to break up the fluffy butter sugar mixture. At this point you add the coffee, be sure that it is fresh and cooled down. Also, any mix-ins like nuts can be added at this point. The raw cookie batter will look like dark chocolate mousse. Drop by rounded spoonful, 2 inches apart onto baking sheet sprayed with non-stick cooking spray. Bakes 8-10 min or until cookis are set.
