1 t cinnamon
1 t baking soda
1/2 t salt (optional)
1/2 c quinoa flour
1 c bread flour
3 c old fashioned Oats
1/2 c Hersey's cinnamon chips (optional)

Mix in oats and chips. roll into 1.5" balls and place on cookie sheet (they don't flatten like normal cookies so if you want flat cookies, flatten them with your hand).
