How Do I Make Mom's Lemon Squares?

Here is how you make Mom's Lemon Squares:

Preheat oven to 350. Mix 1 stick real butter, 1/4 cup powdered sugar, and 1 cup all purpose flour together and press into a 9x9in square pan that has been sprayed with PAM. Bake at 350 for 15 minutes. Mix 1 cup sugar, 2 Tbsp. flour, 1/2 tsp. baking powder, 2 eggs slightly beaten, and 3 tbsp. lemon juice together. Pour over already cooked bottom layer (see above). Bake again at 350 for 25 minutes. While warm, sift 3 tbsp powdered sugar on top. Cut while warm but take up when cool. Use knife to separate the edges from the pan.  If they are ragged, take fingers and go around individual squares to reshape. A little more powdered sugar will hide  anything.  They do dry out, so cover tightly.Makes 9 - 3x3in servings.Number of Servings: 12Recipe submitted by SparkPeople user SKINNYPINKCOW.
