This is a healthier version of an old Pampered Chef recipe. It's a great appetizer for a party. We love eating the leftovers for dinner the next night! We like them plain but I serve it with a teryaki sacue and a sweet and sour sauce on the side for those who want a dip. Yum!

Squeeze the turkey out of the casings and cook into small crumbles over medium heat. Blot dry with paper towel and let cool for a couple of minutes. Place the meat in a large bowl. Add a box of defrosted spinach. Be sure to drain all of the water first. Chop the mushrooms into small pices and place in bowl. Add the cheese and minced garlic. Mix the ingredients together.

Place parchment paper on two cookie sheets. Put one tablespoon of mixture per wrapper and fold the wrapper in half. Then close the other corners and fold. You can shape the wontons like fortune cookies or bring all 4 corners to the top and press down in the center. It helps to fill a tumbler with cold water and dip your thumb and fingers in before closing each wonton. Prior to placing in the oven, brush a small amount of egg white on each wonton.

Bake at 350 for approximately 18 to 20 minutes. The wontons should be slightly brown on top.
