Tomato Sauce:

1 Large Can of Plum Tomatoes in Juice
4-6 cloves of minced garlic
1/2 large onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
5 mushrooms, sliced
Basil, Oregano, salt & pepper to taste

Other Ingredients:
9 lasagna noodles, cooked
2 small zucchini, sliced
2 cups of part skim mozz. or italian 4 cheese blend, shredded
1.5 cups part skim ricotta
4 oz romano cheese, shredded


How Do I Make Veggie Lasagna?

Here is how you make Veggie Lasagna:

To make sauce:1. Cook onions, peppers and garlic in saucepan until onions are soft. Add mushrooms at the end.2. Add canned tomatoes, basil, oregano, salt and pepper. Season to taste.3. Cook on medium low for 20 minutes or until sauce thickens.To make lasagna:Ladel some of the sauce into the bottom of a 13x9 inch pan. Spread to cover the bottom of the pan. Continue to layer noodles, then more sauce, then ricotta, then sliced zucchini, then mozz cheese shreds until all noodles are used. Add more sauce over top of the third set of noodles, and top with romano cheese. Bake at 325 degrees for 45 minutes, covered.
