This makes a good, creamy salad dressing with a real kick. Without the peppers, this makes a great base for any very low calorie salad dressing. You will not be disapointed if you use real Greek Yogurt; there is no substitute. The amount of Chipotle pepper I add to this gives it a very substantial kick. I like it this way, you may want to experiment with less at first. I use the same base for a creamy caesar dressing for my wife, leaving out the chipotle pepper and adding more garlic and 2 tsp of Worcester sauce. It's great fresh, but even better after it sits in the fridge a day or so letting the flavors meld.I listed this as making 4 servings, but it is so lite and low in everything you can indulge yourself.
