Heat oil in a large skillet saut? onion and red pepper until softened. Add salt and pepper to taste along with cumin and dried oregano. Add pork and warm through. Add spinach in batches and cook until wilted. Lay out wraps, put .5 oz. shredded cheese on half, put in a quarter of the filling, top with .5 oz. more cheese. Fold the wrap in half.
