Wash. Trim your artichokes by cutting the stem with a serrated knife - leaving only about 1 inch of stem. Using a serrated knife, cut the top 1/3 of the artichoke off. Trim the sharp edges of all the artichoke "leaves" with kitchen scissors. Bring large pot of water to a boil. Add salt, pepper, lemon juice, three (or more) whole cloves of garlic, and bit of olive oil, and trimmed artichokes. Boil, covered, for 1 hour or until stem of artichoke can be easily pierced with fork. Serve with vegan aioli - recipe to follow.
