3 medium Summer yellow squash, thinnly sliced
1 medium Onion, coursely chopped
1 large egg, slightly beaten
30 Nabisco Ritz Crackers, crumbled (set 5 aside to crumble over the top)
Butter, salted, 1 pat (1" sq, 1/3" high) (remove)

Here is how you make Baked Squash Ritz:

Slice squash and chop onion. Steam both together over boiling water on high for about 10 minutes, or until slightly soft. In the meanwhile, slightly beat egg, set aside. Crumble 25 crackers, set aside, crumble 5 crackers, set aside.Put steamed squash and onion, beaten egg and the 25 crumbled crakers in a large bowl and mix well.Slightly butter a 4x6" baking dish and pour squash mixture in it. Sprinkle top with the rest of the 5 crumbled crackers. Bake at 350 degrees F. for 30 min. Makes approximately 8, 1/2 cup servings.
