1. Mix all ingredients together in a lidded container that will hold 5 litres! Make sure all dry ingredients have been wetted. If necessary use wet hands to mix the last bits in. Do NOT kneed.2. Leave container on counter at room temperature for around 2 hours, until it has risen well. Use lid during this period, but do not secure the lid, it is merely there to stop anything getting into the container, it must not be air tight.3. Place container in fridge.BAKING DAYBaking day can be later on on mixing day or anything up to 2 weeks later.1. Prepare a pizza peel by sprinkling with cornmeal. OR line a suitably sized bowl or basket with a piece of linen cloth and sprinkle cornmeal on that. Sprinkle some flour over one corner of the mixture in the container. Using your hand scoop out a grapefruit sized piece of dough. If necessary use a serrated knife to help separate it from the rest of the dough.3. Very quickly shape into a ball. Do this by pulling the top surface across and back underneath in your hands. turn a little and do that again until the top is nice and smooth.4. Place smooth side up on the pizza peel or smooth side down in the bowl.5. Leave for at least 30 minutes, preferably 45 or even 90 minutes.6. 20 minutes before the end of proving time, preheat the oven to 220 centigrade.7. When the oven is ready, if you used a bowl or basket, sprinkle some cornmeal on a pizza peel and tip the dough out of the bowl onto the peel.8. Prepare a glass of hot water.9. Open the oven, slide the dough onto the baking stone, and pour the water into the pan on the shelf underneath.10. Bake for 25 - 30 minutes. When done the bread should sound hollow when tapped on the bottom.11. Leave to cool on a cooling rack until ready.
