Here is how you make Robert's Whole Wheat Bread:

Combine 3 C Hard Red & 3 C Hard White Flour with 2 C water and buttermilk. Cover and let sit at room temperature for at least 4 hours. This breaks down the phytic acid and sort of tenderizes the flour.Proof the yeast in warm water with soda and honey.Whisk olive oil, honey, and salt with proofed yeast mixture. Break up wetted flour and return to mixer bowl (be sure to use dough hooks rather than a beater) and add the yeast mixture. Mix the soaked flour and yeast mixture well. Add Hard White flour in 1/2 C increments until dough is kneadable.Knead for 8 minutes. Place in bread greased bread bowl and let rise for 90 minutes. Push down dough and let rise for 45 minutes. Push down dough and divide into two loaves. Place in greased bread pans and let rise 45 minutes. Bake for 45 to 50 minutes at 350 degrees. Turn loaves out of pan and let cool on a rack before slicing.
