1/3 c. unsweetened applesauce
3 tbsp. active dry yeast
3 1/2 c. warm water (110 degrees)
1/4 c. honey
1/4 c. unsulphured molasses
1/2 c. extra light olive oil
3 tbsp. lemon juice
2 eggs, beaten
4 c. King Arthur unbleached bread flour, spooned and leveled
9 c. whole wheat flour, spooned and leveled
1/2 c. ground flax seed
1 c. oat bran
1/2 c. sunflower seeds
3/4 c. bulgur wheat
1 tbsp. Tastefully Simple Seasoned Salt or sea salt
Cooking Spray
Olivio Olive Oil spray
2 tbsp. ground flax seed
4 tsp. oat bran


How Do I Make Whole Wheat Seed Bread?

Here is how you make Whole Wheat Seed Bread:

Stir together the 1/2 cup water and applesauce in a small bowl. Dissolve the yeast in the mixture, let stand until creamy, about 5 minutes. Pour the yeast mixture into a large bowl with 3 1/2 cups of warm water, honey, molasses, vegetable oil, lemon juice, and eggs; stir together to combine well. In a separate bowl, combine the bread flour, whole wheat flour, flax seed, oat bran, sunflower seeds, bulgur wheat, and salt. Stir all but 1 cup of the flour mixture into the yeast mixture until a smooth dough forms. Knead on a lightly floured surface until smooth and elastic, about 10 minutes; if dough is too sticky work in remaining 1 cup. (Can also knead right in bowl). Divide mixture in half. Place each half in a bowl sprayed with cooking spray and cover; let rise in a warm place until doubled in volume, about 1 hour. Lightly grease four 9x5 inch loaf pans (or 2 9x5 loaf pans and 2 9-inch cake pans if making rolls) with cooking spray. Punch down dough, shape into loaves and/or rolls, and place in the pans. Spray dough with Olivio and sprinkel each loaf with 1/2 tbsp. ground flax seed and 1 tsp. oat bran. Allow to rise in pans until doubled in bulk, about 1 hour. Preheat oven to 375 degrees F (190 degrees C). If you have a small oven, bake 2 loaves at a time, putting the remaining loaves in the refrigerator so they don't over-rise. Place loaves in over; spray oven walls and bottom with water. Close door. Wait 1 minute and spray again. Bake 40 to 50 minutes, or until the loaves sound hollow when removed from the pan and tapped on the bottom (should reach an internal temperature of 210 degrees). Cool 5 minutes in pans.
