Place a clean handkerchief or cheese cloth in a small colander in the sink. Pour the yogurt mixture into the colander; the whey will begin to drain out of the yogurt. Lift the four corners of the cloth together to form a sort of sling and secure it with a strong rubber band. Suspend the sling in the sink by looping the rubber band around the kitchen faucet, or suspend it in the refrigerator for freshness with a bowl to catch the whey. After about 24 hours, the whey will have drained off. Open up the cloth, mold the cheese into a ball, and store in the refrigerator. Eat within one week.Makes approximately 10 1/4-cup servings.Serving suggestions: 1. Spread on a bagel. Mix crushed garlic and herbs in with the finished cheese to create your own bagel spread.2.
