1/2 tbsp.ground cumin, or to taste
1/4 tsp. cayenne, or to taste
optional: roasted turmeric, finely chopped parsley, roasted red pepper finely chopped, etc.

If using dried beans: SOAKING THE GARBANZO BEANS? 1 C. garbanzo beans*? 4 C. waterSoak beans overnight. Drain and rinse beans. Add 4 cups of water for every 1 cup of garbanzo beans. Liquid should be 1-2 inches above the top of the beans. Bring to a boil; reduce heat and simmer for about 2 hours, OR pressure cook 12-15 minutes. *1 cup of beans yields 2 - 2 1/2 cups of cooked beansDrain, rinse, and hull beans. reserve remaining beans.Canned beans: Drain, rinse, and hull beans.Place chickpeas in blender or food processor. Blend chickpeas with the sesame paste, lemon and orange juices and remaining ingredients; puree. Adjust flavor and consistency with lemon juice and salt if needed. (Hummus should be thick and smooth.)Serve in a shallow bowl. Pour olive oil in the center and garnish with the reserved chickpeas and/or chopped parsley. Or:Transfer the hummus to a serving bowl and drizzle a little oil over the top.
