1 C chicken stock
? C white wine
Pan scrapings and drippings from the roasted pork (make up the difference with olive oil if necessary, which is why I added it to the ingredients list)
? C capers
Fresh chopped parsley (and/or fresh chopped oregano), approx. 1 TBSP
1 tsp butter
Salt & freshly ground pepper, to taste

Here is how you make Oven Roasted Pork Tenderloin Pan Sauce:

While your pork tenderloin pork is resting, to make the pan sauce, either use the roasting pan directly on the stovetop or scrape the drippings into a small pan. If necessary, add a teaspoon or two of olive oil to the scrapings. Add the chicken stock and white wine, and bring to a boil. Simmer until reduced by 1/3.Add capers and adjust for seasoning, adding salt and pepper to taste. Just before serving, whisk in the teaspoon of butter and fresh oregano and/or parsley, then spoon the sauce over the sliced pork medallions and serve.
