1 tbsp. fresh thyme leaves or 1 tsp. dried
1/4 cup dry white wine
1/4 cup defatted reduced-sodium chicken stock

In a large non-stick skillet, heat oil over medium heat. Add shallots and saute for 2 minutes or until softened. Add leeks, carrots, parsnips and celery and saute for 1 minute. Sprinkle with thyme, then stir in wine and stock. Reduce heat to low. Cover the pan tightly and simmer until the vegetables are tender, 7 - 10 minutes.
