Preheat a 10-12 inch omelette pan over medium heat until rim is hot to touchAdd oil & wait 1 minute then add prosciutto and cook stirring often until browned (about 4 min). Remove from pan and drain on paper towelsAdd almonds to pan, stir until golden (2-3 min). Remove from pan and drain on paper towels. Discard oil from panIn a small bowl mis OJ, vinegar, cornstarch, grated orange zest until smooth. Pour into pan. Increase heat to high and cook stirring often until sauce is bubbly (1 min) Pour into serving gown and keep hot.Rinse pan, place asparagus in pan; add 1/2 c water.
