Here is how you make Gingered Love Apple Jelly:

In a large stainless steel saucepan, combine tomatoes, water, and ginger. Bring to a boil over medium heat. Reduce heat and boil gently, stirring and crushing tomatoes occasionally.Transfer tomato mixture to a dampened jelly bag or strainer lined with cheesecloth. Set over a deep bowl and let drip for about 2 hours. Do Not Disturb. Measure 1 3/4 cups tomato juice. (If you do not have enough, add boiling water to the remaining tomato pulp to get additional juice)Prepare canning jars and lids.Transfer tomato juice to a large, deep stainless steel saucepan. Add lemon juice. Whisk in pectin until dissolved. Bring to a boil over high heat, stirring frequently. Add sugar all at once and return to a full rolling boil, stirring constantly. Boil hard, stirring constantly, for one minute. Remove from heat and quickly skim off foam.Quickly pour jelly into sterilized jars, leaving 1/4 inch headspace. Wipe rim, center lid, and screw on band until resistance is met, then increase to finger tight.Place jars in canner and cover completely with water. Boil for 10 minutes. Remove canner lid.
