Here is how you make Collard Greens w/Low Sodium Bacon:

Brown off bacon and remove from pan. Drain off fat. Heat olive oil in pan and saute onions until soft. Add hot pepper flakes to the oil and fry for 1 minute. Add the collard greens and stir thoroughly. Cover and reduce heat to medium. Cook 10 minutes or until collards are hot and tender. Remove lid, add vinegar, season to taste and allow to cook another 5-7 minutes to reduce some of the moisture.
