PreHeat Over to 400Wash PotatoesPoke Potatoes with a Fork in several spacesPut Potatoes in on middle rack, I don't use a pan or anything I just stick them on the rackCook for about an 1.5 hours or until cooked throughCarefully remove Potatoes from Oven.Slice Each Potato in half and scoop the inside into a large bowl. If your bowl is not huge do this in two batches.Add other ingredients and mix well.Then scoop mix back into potato skin. To serve immediately place filled skins in a shallow baking dish and bake for another 15-20 min.Or wrap each potato in aluminum foil and freeze.To reheat place in 350 degree oven for 30 minutes or until heated through. You can also reheat in the microwave and then finish it on the middle rack of oven under the broiler for about 5 minutes to crisp the skin.
