The ingredients for Terri's Banana Bread are:

1 3/4 c whole grain flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1 c whole pitted dates
1/4 c agave nectar (or honey)
1/4 c water
1 Tbs. Butter, softened (optional)
2 eggs, separated and whites beaten until lightly frothy
4 medium sized ripened bananas
3/4 c milk


How Do I Make Terri's Banana Bread?

Here is how you make Terri's Banana Bread:

Preheat oven to 350 degrees and grease a square 8 X 8 inch cake pan. In a medium bowl, sift together dry ingredients. Place dates, agave nectar and water in a blender. Puree until smooth but not watery. Pour date puree in a large bowl. (note, no need to rinse the blender yet) Add butter to puree and beat on medium until smooth and well combined. Add egg yolks and beat on low until smooth and well combined. Add egg whites and beat on low until combined and fluffy. Put banana into a the blender and cover with milk. Blend on low until mashed, but not watery. Add 1/4 of the flour mixture and 1/4 of the banana mixture at a time to the date puree. Mix only until combined, then add the next 1/4 until all ingredients are combined. Pour into a greased square 8 X 8 cake pan. Bake at 350 degrees for one hour or until toothpick in center comes out clean. Cool 10 minutes, then remove from pan and cool on a wire rack.
