How Do I Make Fiber One pancakes with blueberries and banana?

Here is how you make Fiber One pancakes with blueberries and banana:

Makes 5 pancakes, using a 1/4 cup measure to scoop the batter. 1. Heat a heavy skillet or griddle on medium to medium high heat until water "dances" when sprinkled on it. Use non-stick coating and no oil is needed.2. Pour the batter by 1/4 cup scoopfuls onto the griddle and let it spread out evenly, turning the pan slightly if desired. Allow about 2-3 minutes on the first, side, depending on how thick your pan is, until the top side has really bubbled and begun to dry out on the edges. Because of the sugars in the banana, these will brown more than a plain buttermilk pancake but with the fruit, they need a bit longer to cook or you'll have raw batter in the center. So pay attention, and lower the flame a bit if needed. When they're ready, flip them over and cook about 90 seconds to 2 minutes on the other side ( the first side should be a very dark brown). 3. Store on a warmed plate with a heated towel over them until all are ready, and if desired, spread a little butter on them just as they come off the skillet. These are great served as a pancake sandwich with a smear of peanut butter and cream cheese or with more blueberries in their juice on top. Or serve with an egg and a slice of ham on top for a balanced meal. 4. These store great in the fridge, if kept in plastic wrap and also freeze well. Just spritz lightly with a bit of water and microwave for about 20-30 seconds each, for a quick meal on the go. Number of Servings: 5Recipe submitted by SparkPeople user CCKELLY3.
