Combine flour, baking powder, soda, and salt in bowl of food processor. Pulse a few times to evenly mix. Add cold butter and pulse until coarse crumbs form and butter is evenly distributed. Add cheese (if using) and pulse one or twice to mix. Pour in 3/4 cup buttermilk or yogurt and pulse until a shaggy dough forms...if too dry, add additional 1/8 c. buttermilk. Dough will NOT form a ball in the food processor. Once a shaggy moist dough is formed, turn dough out onto floured board and knead once or twice to pull together. Pat into a 3/4" thick round and cut out desired shapes with floured cookie cutter or glass. 2" is a good size. Once all shapes that can be cut out have been, gather scraps, knead once or twice to reform a dough ball, and repeat. Continue until all dough has been cut into biscuits.Place biscuits on parchment-lined baking sheet and bake in preheated oven for 7-9 minutes (depending on the size/shape).
